The biriyani is such a dish which can make you drool over it.
Biriyani is made using basmati rice, spices and marinated meat. It is made using a pot and applying dum(pressure).
Biriyani originated among the Muslims which later became popular among all the indians.
Biriyani is mostly paired with raita which enhance it's taste.
But biriyani has also evolved according to the requirements and convenience of people. Here I will be sharing with you the recipe to make veg biriyani which is comparatively easier than the non-veg one as the veggies doesn't require marination. We will be using a pressure cooker as now days pots are not available to all and a cooker is very convenient. Your biriyani will be ready within just 30-40mins.
Trust me the aroma of the rice will drive you crazy.
GARAM MASALA -
1. Cinnamon -1 inch (dalchini)
2. Star anise (Anasphal / Badayan / Chakri Phool)
3.Black cardamom -2 (badi elaichi)
4.Cardamom - 2 (chhoti elaichi)
5.Black pepper - 5/6 (Kali mirch)
6.Clove - 3 (laung)
7. Green chilli - 2 (Hari mirch)
8.Bay leaf - 2 (tej patta)
9.Turmeric powder (Haldi)
10.Red chilli powder (laal mirch powder)
11.Salt (namak)
12.Everest sahi biriyani masala(2 table sp)
VEGGIES -
1.Beans
2.Carrot
3.Cauliflower
4.Onion
OTHER -
1.Soaked rice (1cup)
2.Ghee
3.Refined oil
4.Cashew nut (kaju)- 8
5.Raisin (kishmish)- 12/15
6.Soya chunks - 10/15
✓If kaju is unavailable you can use
peanuts(mungfali).
✓If you want to make the biriyani rich you can add small cubes of paneer as well.
1.Take 3tbsp oil and 1tbsp ghee in a pressure cooker.
2. Add the garam masala mentioned above into the pressure cooker.
3.Add a chopped onion(bigger in size).
4.Add 2 green chillies with a cut along the length.
5.Sautae for 2-3mins.
6. Add turmeric powder, red chilli powder, biriyani masala, soya chunks/paneer, kaju, kishmish and a pinch of salt(we are going to salt again).
7. Sautae again for 2-3mins.
8. Then add the soaked rice.
9. Mix it well and add salt as per your taste(remember we have already added a pinch of salt).
10. Mix it for 5mins on medium flame.
11. Add 1&1/2 cup water and the close the lid.
12. Wait for 1 whistle at low flame and then bring it down but do not remove the vapours or open. Let it stay for 10mins.
13. Ater that open the lead.
14. Add a spoon of ghee on the top.
